            อุตสาหกรรมอาหารกำลังก้าวสู่ยุคที่ สุขภาพ ความยั่งยืน และการใช้ทรัพยากรอย่างคุ้มค่า กลายเป็นปัจจัยหลักในการพัฒนาผลิตภัณฑ์ ส่งผลให้ Upcycled Ingredients ได้รับความสนใจอย่างมากในฐานะการเปลี่ยนวัสดุเหลือใช้ทางการเกษตรให้เป็นวัตถุดิบมูลค่าสูง ภายใต้แนวคิดเศรษฐกิจหมุนเวียน (Circular Economy) และ BCG Economy หนึ่งในตัวอย่างที่โดดเด่นคือ เปลือกหุ้มเมล็ดโกโก้คั่ว (Cocoa Bean Shell) ซึ่งยังอุดมด้วยใยอาหาร สารฟีนอลิก คาเทชิน โปรไซยานิดิน และเมทิลแซนทีน เช่น Theobromine และคาเฟอีน จึงมีศักยภาพในการพัฒนาเป็นอาหารและเครื่องดื่มเชิงหน้าที่

            บทความนำเสนอกรณีศึกษาจากมหาวิทยาลัยราชภัฏเพชรบูรณ์ ที่ต่อยอดเปลือกโกโก้จากชุมชนโกโก้นางั่วสู่ คอมบูฉะ (Kombucha) เครื่องดื่มหมักที่ตอบรับกระแส Functional Beverage ซึ่งตลาดโลกมีแนวโน้มเติบโตเฉลี่ยร้อยละ 7.6 ต่อปี จากความต้องการผลิตภัณฑ์ที่ส่งเสริมสุขภาพลำไส้ ลดน้ำตาล และใช้วัตถุดิบจากธรรมชาติ

            ความท้าทายสำคัญไม่ได้อยู่ที่การหมักเพียงอย่างเดียว แต่คือ การควบคุมคุณภาพของวัตถุดิบและกระบวนการผลิต เนื่องจากระดับการคั่วของเปลือกโกโก้ส่งผลต่อสี กลิ่น รส และสารสำคัญ การผลิตเชิงอุตสาหกรรมจึงต้องติดตามทั้งค่า pH, Total Titratable Acidity, ปริมาณกรดอะซิติก และเอทานอลคงเหลือ เพื่อรักษาคุณภาพ ความปลอดภัย และความสม่ำเสมอของผลิตภัณฑ์

            ผลการวิจัยพบว่า สูตรคอมบูฉะจากเปลือกโกโก้ 100% ได้รับคะแนนความชอบสูงสุด มีความปลอดภัยตามมาตรฐาน และเมื่อนำไปพัฒนาเป็นผลิตภัณฑ์พร้อมดื่มได้รับการยอมรับในระดับ "ชอบมากถึงชอบมากที่สุด" นอกจากนี้ ยังมีการถ่ายทอดเทคโนโลยีการผลิตสู่วิสาหกิจชุมชน ช่วยเพิ่มศักยภาพในการสร้างผลิตภัณฑ์มูลค่าสูงจากทรัพยากรท้องถิ่น

            บทความสะท้อนว่า การสร้างมูลค่าจากวัสดุเหลือใช้ไม่ได้หมายถึงการพัฒนาผลิตภัณฑ์ใหม่เพียงอย่างเดียว แต่เป็นการเชื่อมโยงนวัตกรรมอาหาร วิทยาศาสตร์การหมัก ความยั่งยืน และการพัฒนาเศรษฐกิจฐานราก เพื่อสร้างประโยชน์ร่วมกันตลอดห่วงโซ่อุปทาน ภายใต้แนวคิด "From Waste to Wellness" ซึ่งอาจเป็นทิศทางสำคัญของอุตสาหกรรมเครื่องดื่มแห่งอนาคต

            As the food industry shifts towards health, sustainability, and resource efficiency, upcycled ingredients are emerging as a strategic approach to transforming agricultural by-products into high-value functional foods. One promising example is the roasted cocoa bean shell, a by-product rich in dietary fibre, phenolic compounds, catechins, procyanidins, theobromine, and caffeine, making it an attractive ingredient for functional beverage innovation.

            This article presents a case study from Phetchabun Rajabhat University, where roasted cocoa bean shells were successfully developed into kombucha, aligning with the rapidly expanding global functional beverage market. With the global kombucha sector projected to grow at a 7.6% CAGR, innovation is increasingly focused on reduced sugar, natural ingredients, gut health benefits, and sustainable sourcing.

            Beyond formulation, the research highlights the importance of process optimisation and quality control. Variations in roasting conditions significantly affect flavour, colour, bitterness, and bioactive compounds, while industrial production requires comprehensive monitoring of pH, total titratable acidity, acetic acid, residual ethanol, and sensory quality to ensure safety and product consistency.

            Consumer evaluation demonstrated strong acceptance of the 100% cocoa shell kombucha, while technology transfer to local community enterprises showcased the potential to convert agricultural waste into commercially viable, value-added products. The study illustrates how scientific research can support local producers by combining fermentation technology, food safety, and product innovation.

            Ultimately, cocoa shell kombucha represents more than a novel beverage. It exemplifies how upcycling can integrate food science, circular economy principles, community development, and functional nutrition to create sustainable value throughout the supply chain. Rather than viewing agricultural by-products as waste, the industry has an opportunity to transform them into premium products that benefit consumers, farmers, businesses, and the environment alike.
