Freshness and safety are critical dimensions of seafood quality. Due to its high moisture content and delicate tissue structure, seafood is highly susceptible to physical and chemical deterioration, as well as microbial growth. Traditionally, seafood preservation has relied on refrigeration combined with disinfectants such as chlorine. However, this approach has limitations, including chemical residues and potential effects on product color, odor, and flavor. Ozone technology offers an alternative approach to maintaining seafood quality and safety.

Ozone (O₃) is a triatomic oxygen molecule with strong oxidizing properties that can effectively inactivate microorganisms under appropriate conditions. It subsequently decomposes into molecular oxygen, leaving no persistent chemical residues. In the seafood industry, ozone can be applied as either ozonated water or gaseous ozone. Applications include washing raw materials, producing ozonated slurry ice for temperature control and preservation, improving process water quality, and sanitizing food-contact surfaces and production equipment.

Ozone inactivates microorganisms through several mechanisms: damaging cell membranes and walls, oxidizing proteins and enzymes, and causing damage to genetic materials such as DNA and RNA. Beyond seafood processing, its applications extend to aquaculture, the preservation of live aquatic animals, seafood shelf-life extension, plant sanitation, and odor control in areas where seafood processing by-products are handled.

An important development is Smart Ozone, which shifts ozone management from experience-based control toward data-driven operations and automation. Sensors monitor critical parameters, including dissolved ozone concentration, temperature, pH, and oxidation-reduction potential (ORP), allowing the system to automatically adjust ozone dosing in real time. This helps prevent excessive ozone use and maintain process consistency. However, ozone concentration and exposure time must be carefully controlled because excessive treatment may adversely affect seafood color, odor, flavor, and texture. Appropriate safety measures, including enclosed contact tanks, ozone destruction systems, ventilation, and automatic shutdown systems, are also essential to protect operators from ozone exposure.

Investing in smart ozone systems therefore goes beyond adopting disinfection technology. It represents an approach to improving quality management throughout the production chain, supporting traceability, strengthening consumer confidence, and enhancing the long-term competitiveness of seafood businesses.
