The beverage market is entering an era in which traditional product boundaries are becoming increasingly blurred. Tea, coffee, juice, energy drinks, and health beverages are evolving into products that combine characteristics from two or more categories, including coffee-infused energy drinks, juice–tea blends, probiotic sodas, and sparkling functional waters. This trend reflects the rise of Hybrid Beverages, where product development goes beyond combining ingredients to create a multidimensional experience encompassing flavor, refreshment, nutrition, and functional benefits.

The key challenge, however, is integrating functionality with a satisfying consumption experience. Research on functional beverages highlights the need to consider functional ingredients, processing technologies, stability, bioavailability, health benefits, and consumer acceptance as interconnected factors. Adding a promising bioactive ingredient alone is not enough if it negatively affects taste, aroma, texture, or overall liking.

This becomes particularly important in beverages containing plant-, tea-, or vegetable-derived ingredients, which may introduce distinctive sensory characteristics such as bitterness. Research on mixed-vegetable juices indicates that bitterness intensity and brand liking can influence purchase-related behavior, emphasizing the importance of evaluating functional ingredients alongside the overall sensory profile. Consumers experience the beverage as one integrated product rather than evaluating each active compound independently.

Creating a new beverage experience also does not necessarily require adding another functional ingredient. Research on carbonation demonstrates that modifying a beverage’s physical characteristics can alter sensory perception and consumer liking. Meanwhile, emotional-response measurement can provide additional insight beyond conventional liking scores, helping developers understand how a product is experienced rather than simply whether it is accepted.

For hybrid beverage developers, the critical question is therefore shifting from “What else can we combine?” to “Will consumers still want to drink it?” The concept of from function to feeling captures this direction: functional benefits may encourage consumers to try a product, but flavor, sensory perception, emotion, and the overall drinking experience can play an important role in acceptance and repeat consumption. The future of hybrid beverages lies not simply in combining more functions, but in transforming those functions into a coherent experience that consumers genuinely value.
