กาแฟพิเศษ (Specialty coffee) ถูกนิยามสำหรับใช้เรียกกาแฟอะราบิกาที่ได้คะแนนประเมินคุณภาพตั้งแต่ 80 คะแนนขึ้นไป ซึ่งการประเมินดังกล่าวถูกนิยามตามมาตรฐานสากลโดยสมาคมกาแฟพิเศษ (Specialty Coffee Association; SCA) ซึ่งจะแตกต่างจากกาแฟโรบัสตาที่เกรดพิเศษจะถูกเรียกว่า Fine robusta ภายใต้การดูแลของหน่วยงานพันธมิตรที่ชื่อว่า Coffee Quality Institute (CQI) เนื่องจากความแตกต่างทางธรรมชาติของสายพันธุ์ทำให้วิธีการประเมินคุณภาพที่ใช้มีความแตกต่างกัน

ในกระบวนการแปรรูปกาแฟแบบเปียก (Washed process) เกษตรกรจะเริ่มจากการปอกเปลือกผลกาแฟเชอร์รีออก จากนั้นนำเมล็ดกาแฟที่ได้ไปแช่ในน้ำสะอาดภายในถังหมัก เพื่อให้จุลินทรีย์และเอนไซม์ช่วยย่อยสลายชั้นเมือกที่ห่อหุ้มเมล็ดกาแฟ โดยกระบวนการหมักมักใช้เวลาประมาณ 12–36 ชั่วโมง หลังจากนั้นจึงล้างทำความสะอาดเมล็ดกาแฟ และนำไปตากแห้งจนมีความชื้นอยู่ที่ประมาณร้อยละ 10–12 ก่อนนำไปคั่วหรือส่งต่อเพื่อจำหน่าย ซึ่งกระบวนการหมักแบบดั้งเดิมจะอาศัยจุลินทรีย์ตามธรรมชาติ (Spontaneous fermentation) ที่ติดมากับเปลือกเชอร์รี ผลกาแฟ ลานตาก หรือถังหมัก ซึ่งมักจะมีจุลินทรีย์หลายๆ ชนิดผสมกันอยู่ ทั้งแบคทีเรีย เชื้อรา และยีสต์ ส่งผลให้ไม่สามารถคาดเดากิจกรรมและชนิดของจุลินทรีย์เหล่านี้ได้ ผลิตภัณฑ์ที่ได้ส่วนมากจึงขาดความสม่ำเสมอจากการผันผวนของสังคมจุลินทรีย์ในแต่ละฤดูกาล โดยหนึ่งในวิธีแก้ปัญหาที่ได้รับความสนใจศึกษาอย่างกว้างขวางในวงการวิทยาศาสตร์ คือ การเติมหัวเชื้อจุลินทรีย์ที่ต้องการในระหว่างกระบวนการหมักกาแฟ โดยเฉพาะการเติมหัวเชื้อยีสต์ (Yeast starter culture)

การเติมหัวเชื้อยีสต์ในกระบวนการหมักกาแฟจึงเป็นแนวทางที่ตอบโจทย์อุตสาหกรรมกาแฟพิเศษได้อย่างครบวงจร ทั้งการสร้างความสม่ำเสมอให้แก่ผลิตภัณฑ์ การยกระดับมิติของกลิ่นรสให้โดดเด่นและเป็นเอกลักษณ์ ไปจนถึงการเพิ่มความปลอดภัยต่อผู้บริโภคด้วยการลดการปนเปื้อนของสารพิษ OTA ดังนั้น การนำองค์ความรู้ทางจุลชีววิทยามาประยุกต์ใช้อย่างเข้าใจจึงไม่เพียงช่วยเพิ่มมูลค่าให้แก่เมล็ดกาแฟ แต่ยังเป็นก้าวสำคัญที่จะผลักดันกาแฟพิเศษของไทยให้ก้าวสู่การแข่งขันในเวทีระดับสากลได้อย่างมั่นใจ

Specialty coffee is the term used for Arabica coffee that receives a quality-evaluation score of 80 points or higher, an assessment defined according to the international standard set by the Specialty Coffee Association (SCA). This differs from Robusta, whose specialty grade is called Fine Robusta and is overseen by a partner organization named the Coffee Quality Institute (CQI); because of the natural differences between the species, the quality-evaluation methods used differ as well.

In the washed coffee process, the cherry skin is removed, and the mucilage-coated beans are fermented in clean water for 12–36 hours to allow microorganisms or enzymes to break down the mucilage. The beans are then washed and dried to a moisture content of 10–12% before roasting or sale. Traditionally, this process relies on spontaneous fermentation by naturally occurring microorganisms from the coffee cherries, drying patios, and fermentation tanks. Because these microbial communities consist of diverse bacteria, molds, and yeasts, their composition and activity are difficult to control, often resulting in inconsistent coffee quality. Seasonal changes, together with variations in weather, humidity, and temperature, further influence microbial growth. In the worst case, the coffee may develop undesirable odors, such as fermented or musty notes caused by the growth of unwanted molds or bacteria. One widely studied approach to address this challenge is the use of microbial starter cultures during coffee fermentation, particularly yeast starter cultures.

Adding yeast starter cultures during coffee fermentation is a comprehensive solution for the specialty coffee industry — from ensuring product consistency and elevating flavor profiles to make it creating distinctive and unique characteristics, to improving consumer safety by reducing contamination with the mycotoxin OTA. Applying microbiological knowledge with a genuine understanding of fermentation processes not only adds value to coffee beans but also represents an important step toward advancing Thailand’s specialty coffee industry and strengthening its competitiveness on the international stage.
