…สีธรรมชาติ คือ วัตถุเจือปนอาหารประเภทสารให้สีที่ผลิตจากวัตถุดิบจากธรรมชาติ เช่น ผัก ผลไม้ แมลง สาหร่าย และจุลินทรีย์ โดยวิธีทางกายภาพและ/หรือทางเคมี4 สีธรรมชาติที่มักพบการใช้ในอุตสาหกรรมอาหาร ได้แก่ แอนแนตโท (INS 160b) คาราเมล (INS 150) แคโรทีน (INS 160a) คลอโรฟิลล์ (INS 140, 141) และ คาร์มีน (INS 120) คำถามคือ “สีเหล่านี้เป็นสีธรรมชาติจริงหรือไม่” “ทำไมสีเหล่านี้ยังคงมีเลข International Numbering System for Food Additives (INS No.)” ทั้งนี้อาจเพราะมีการใช้ตัวทำละลายอินทรีย์ สารอิมัลซิไฟเออร์ และสารต้านอนุมูลอิสระ กระบวนการสกัดสีธรรมชาติ แม้ว่าจะใช้แหล่งวัตถุดิบจากธรรมชาติแต่สารเคมีในกระบวนการสกัดอาจตกค้างอยู่ในผลิตภัณฑ์ ทำให้สีธรรมชาติเหล่านี้จึงถูกกำหนดปริมาณสูงสุดที่อนุญาตให้ใช้ในอาหาร อีกทั้งสีบางชนิดอาจไม่เป็นที่ยอมรับในบางประเทศ

…The natural food color is color additives obtained from natural raw material such as fruit, vegetable, insects, algae, and microorganisms by physical and/or chemical process4. Common uses of natural colors in the food industry are Annatto (INS 160b), Caramel (INS 150), Carotene (INS  160a), Chlorophyll (INS 140, 141), and Carmine (INS 120). The question is, “Are they natural?”, “Why all have International Numbering System for Food Additives (INS No.)?”. Because it was obtained by selective extraction by organic solvent, emulsifier, and antioxidant agents5, although the raw materials are a natural source, the process had been used chemical substances for extraction. This reasons why natural food colors have limitations in use. They are not allowed to use in all food categories, and some types are non-global acceptance.
