Positive Impacts of Efficient Spoilage Control in Food Manufacturing

การปล่อยให้อาหารเน่าเสียและกลายเป็นขยะเป็นประเด็นสำคัญระดับโลกเราจึงควรกำหนดเป้าหมายในการพัฒนาที่ยั่งยืน โดยเฉพาะเป้าหมายการพัฒนาที่ยั่งยืน (Sustainable Development Goals) ที่ 12 หรือความรับผิดชอบในการบริโภคและการผลิต ส่วนหนึ่งของเป้าหมายนี้ คือ SDG 12.3 มีจุดมุ่งหมายที่จะลดจำนวนขยะที่เกิดจากอาหารลงครึ่งหนึ่งของขยะทั้งหมด เฉลี่ยต่อประชากรทั่วโลก  ในการบรรลุเป้าหมายนี้ทุกคนตั้งแต่เกษตรกร ผู้ประกอบการ  แม้กระทั่งผู้บริโภคต่างมีบทบาทสำคัญด้วยกันทั้งสิ้น

ตัวการสำคัญที่ทำให้เกิดการเน่าเสียของอาหาร คือ เชื้อจุลินทรีย์ เช่น ยีสต์ รา และแบคทีเรียที่ทำให้เกิดการเน่าเสียต่างๆ หากมีการปนเปื้อนและเจริญเติบโตในอาหารจะทำให้เกิดลักษณะอันไม่พึงประสงค์ เช่น มีกลิ่นและรสชาติไม่พึงประสงค์ มีความขุ่น มีการเปลี่ยนสี ซึ่งทำให้อาหารนั้นไม่เหมาะสมที่จะนำมาบริโภค

เพื่อแก้ปัญหานี้ผู้ผลิตอาหารจึงควรทำการทดสอบและระบุชนิดของจุลินทรีย์ที่เป็นสาเหตุทำให้เกิดการเน่าเสีย โดยการวิเคราะห์หาสาเหตุที่แท้จริงและหาวิธีการเพื่อป้องกัน ลด หรือขจัดสาเหตุของการเน่าเสียนั้นๆ

หนึ่งในความท้าทายในการทดสอบเชื้อจุลินทรีย์ที่เป็นสาเหตุของการเน่าเสียคือการใช้เวลานานกว่าจะรู้ผลทดสอบ ทำให้ดำเนินการแก้ไขได้ช้าลง ดังนั้น วิธีการทดสอบเชื้อจุลินทรีย์ อย่าง Total Plate Count จะช่วยให้สามารถระบุเชื้ออย่าง Coliform, E. coli, Lactic Acid Bacteria ยีสต์ และราได้ จึงควรเลือกใช้วิธีการทดสอบที่ให้ผลทดสอบรวดเร็ว (Rapid Test) ซึ่งจะให้ผลที่เร็วกว่าวิธีแบบดั้งเดิม การนำเครื่องมือตรวจวัดค่าความสะอาดแบบ ATP มาใช้เป็นอีกทางเลือกหนึ่งของวิธีการทวนสอบความสะอาดที่ง่าย ให้ผลการทดสอบที่รวดเร็ว และน่าเชื่อถือ อีกทั้งการมีระบบจัดการข้อมูลที่ดีจะช่วยให้การตัดสินใจและการดำเนินการเชิงรุกเพื่อป้องกันการปนเปื้อนข้ามของเชื้อจุลินทรีย์


การนำนวัตกรรมและเครื่องมือมาใช้อย่างมีประสิทธิภาพ จะช่วยควบคุมการเน่าเสียของอาหารและทำให้คุณภาพของผลิตภัณฑ์อาหารดีขึ้น มีอายุการเก็บรักษานานขึ้น และสามารถลดขยะจากอาหารได้อีกด้วย นอกจากนี้ยังช่วยส่งเสริมภาพลักษณ์และความพึงพอใจของลูกค้า  มากไปกว่านั้นการแก้ปัญหาเรื่องการเน่าเสียของอาหารสามารถให้ทำประโยชน์แก่สังคม

 

The expanding global population is facing food security issue as a large amount of food produced for humans is wasted annually. The Food and Agriculture Organization (FAO) expected that one third, or approximately 1.3 billion tons, of food produced for human consumption is wasted per year, while the waste of produced food is as high as 23% in South Asia and Southeast Asia.     

 

Food waste and losses have become a global issue that requires a concrete development goal. The Sustainable Development Goal 12 (SDG) focused on responsible consumption and manufacturing and the SDG 12.3 calls for reducing half of the global food waste per capita. To achieve this goal, everyone, both manufacturers and consumers, play an important role.

 

The major cause of food spoilage is microorganisms like yeasts and fungi and bacteria. Contamination or growth of these microorganisms in food can cause undesirable traits like changes in odors and tastes and having muddy appearances, which make the food unfitting for consumption.  

To tackle the issue, food producers should test and identify types of microorganisms that could cause spoilage. Analyzing the root cause can help prevent, reduce and eliminate the root cause of food spoilage.

Measures for preventing food spoilage include sourcing for quality raw materials, storing raw materials properly, preventing cross contamination in the production process and selecting proper packaging. These measures can control microorganisms that cause spoilage in accordance with standards and requirements from the regulated authorities. 

Determining the ability of a food to support the growth of spoilage organisms is a challenge as the results can take quite a long time and can delay actions from the manufacturers. Microbiological testing like Total Plate Count can detect coliform, E. coli, lactic acid bacteria, yeast and mold. Rapid testing is a solution that can offer twice faster results than traditional tests. Opting for an ATP (adenosine triphosphate) method is an alternative to access cleanliness with ease, speed, and reliability. It also offers efficient data management to ensure well-informed decision making and promote proactive measures in preventing cross contamination.

Effective applications of innovation and tools can help reduce spoilage, ensure quality, extend shelf life, and minimize food waste. Moreover, it also helps enhance brand image and increase customer satisfaction. Tackling food spoilage issues can benefit society in terms of food security and environmental impacts.
